Spiced Potatoes OR Achari Aloo Recipe -

Hey everyone! :) 
Today I'm going to share one of my favorite recipe. It's called achari aloo or spiced potatoes. 
A quick dish prepared with either baby potatoes or your normal potatoes whichever you want to use. The rich aroma of this dish can make anyone hungry! So let's see what all you need for this dish. 
P.S - You can either use my ingredients or you can try your own variations. 


So what do you need -  
* Boiled baby potatoes or normal potatoes according to the quantity you want to make. 
* Oil to fry. Use mustard oil if possible. It gives a really nice taste!
* Spices such as - Sabzi masala or you can use garam masala if you don't have that. 
                              salt ( according to taste)
                              dry red chillies (1-2)
                              Degi Mirch for color ( 1 tbsp)
                              pinch of Red chilli powder ( you can use half tbsp)
                              pinch of turmeric powder   ( you can use half tbsp)
                              cumin seeds or jeera
                              fennel seeds or saunf ( half tbsp or a little bit more)
                              kasoori methi ( 1 big tbsp)
                              pinch of hing or asafoetida 
                              mustard seeds ( half tbsp)
* coriander to garnish

Done? Now take a pan and add 4-5 tbsp of oil and let it heat. 
Cut potatoes into cubes or half and keep it aside.
Then add - cumin seeds, mustard seeds, fennel seeds and, dry red chillies & let it pop for a minute. 
Now add -  Asafoetida. After that put your boiled potatoes and stir them for a minute. 
Now it's time to add all the spices - So pick up your spoon and add - degi mirch, red chilli powder, turmeric powder, sabzi masala and kasoori methi. 
Keep stiring till all the potatoes are well coated. 
After a minute add salt and stir everything for 3-4 minutes.
Put a lid on for a minute and let it cook. 
Now your potatoes are ready to be served!

Take a big bowl and add the potatoes. Garnish it with coriander leaves!
You can also add thinly sliced ginger strands on the top. But this is completely optional.
Enjoy your achari aloo with roti or just like that!
